This is that recipe that I use for my Sunday morning pancakes. I've been tweaking it over the last couple years:
1 cup flour
1/2 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons baking powder
2 tablespoons granulated sugar
1 cup plain yoghurt (euopean style) *note: do not use non-fat - it tastes horrible.
1/4 - 1/3 cup milk (2% is fine)
3 tablespoons melted butter (30 seconds in the microwave from fridge == perfect)
1 egg
1/2 teaspoon vanilla extract
Sift the dry ingredients. That will make them rise a bit and fluffier. Add the wet ingredients after. once you pour one pancake, flip once you see air bubbles form in the mix. Makes about six 8" (20 cm) pancakes. Could be more or less depending on the size and is enough for three people.
